These resources focused on how pandemics arise and how we can mitigate future risks. As such, they remain as relevant as ever, but now that we have several years of data on COVID-19, I can finally answer the question: What is the role of nutrition in the prevention and victory against COVID-19?

The optimal dietary cholesterol intake may be zero. Wait. Didn’t the US Dietary Guidelines remove cholesterol as a nutrient of concern? No, quite the opposite. Dietary Guidelines: “Consume as little dietary cholesterol as possible.” Even studies funded by the egg industry show that the cholesterol we eat raises blood cholesterol levels.
