What is the big problem of summer? Frozen. It’s everywhere! In great quantities! You really shouldn’t consider ice cream a problem because it’s delicious and cold. But I’m surrounded by ice cream eaters and I need to cut back.

This is easier than my peanut butter banana sundae and more dessert-like than my summer breakfast.

This is a combination of a Reese’s Peanut Butter Cup and a Banana. I’ve been eating these instead of the Klondike bars that my kids love for a summer afternoon treat.

I can’t imagine this took me more than a few minutes to put together. You can use whatever nut butter you have on hand (almond, cashew, sun butter) and just spread as much as you like on the banana slices.

To keep everything together before dipping it in chocolate, you need to freeze it for about 30 minutes.

You can then use the double boiler method to melt the chocolate (or microwave). I like to heat a metal bowl of boiling water in a saucepan, then melt the chocolate. I’ve found that I don’t overheat the chocolate this way (unlike in the microwave, where I’ve made a mess).

After dipping the morsels, place them back in the freezer for another half hour, then store in a Ziploc bag or container.

Do you know what happens? You make them to avoid the piles of ice cream and then your kids see them and eat them!! No!! (actually, yes!!!!!).

My kids think they’re fun and don’t realize they’re not as sweet or big as their regular ice cream.

Ingredients

3 medium bananas
¼ cup nut butter of your choice (I used peanut butter)
½ cup semisweet chocolate chips

Instructions

Cut the plantains into ½-inch slices. Spread nut butter on half the slice and make banana sandwiches. Place on a baking sheet covered with parchment or waxed paper. Freeze for 30 minutes. Heat the chocolate until melted in the microwave on short bursts of power or in a double boiler. Dip the morsels in chocolate and place them back on a cookie sheet. Freeze for 30 minutes. Serve immediately or store for later consumption in a freezer bag or container.
